Aka - Happiness on a plate!

One thing I’ve been working on lately is letting go of my rigidity around food. I’ve been very open about my struggles with an ED in the past, and although I am in a great place with my recovery, I still struggle from time to time with treating myself to foods I love (like cookies)!

While making Kodiak pancakes the other day I noticed a simple recipe for chocolate chip cookies on the back of the box.

I thought to myself “I honest to God don’t know the last time I enjoyed a homemade chocolate chip cookie.”

Conveniently I had all the ingredients so I made a batch... and they are DELISH! I’m pretty sure Joe and I went through half of the batch within hours of making them

Nothing tastes better than food freedom feels.


KODIAK CHOCOLATE CHIP PROTEIN COOKIES

Yields: 24 cookies

INGREDIENTS

  • 3/4 cup butter (softened)

  • 1 cup brown sugar

  • 1 teaspoon vanilla

  • 1 egg

  • 1-1/2 cup Kodiak Power Cakes Mix

  • 1 cup oats

  • 3/4-1 cup chocolate chips

HOW TO MAKE THEM

  1. Preheat oven to 350 degrees

  2. Mix butter and brown sugar until smooth

  3. Add in egg and vanilla

  4. Add the mix and oats, blend, then stir in the chocolate chips

  5. Bake for 9-11 minutes

  6. Eat & Enjoy!
