Vanilla Cinnamon Protein Donuts

I seriously love breakfast.

But to be honest with you, I am not someone who craves the “standard” breakfast foods first thing in the morning (eggs, toast, bacon, etc.).

For whatever reason, I prefer to keep it sweet and simple with my protein oatmeal, homemade granola, or the occasional batch of protein waffles.

Lets be honest though…eating the same thing every single day can get a little old after awhile, so in an attempt to switch things up a bit, I stumbled upon (and modified) this recipe for VEGAN VANILLA CINNAMON DONUTS!

As someone who eats a clean diet (most of the time) and prioritizes eating a healthy balance of ALL MACROS, these donuts paired with a side of fruit and Greek yogurt (or cottage cheese) HAVE IT ALL.

They taste like straight-up cake, are packed with protein and are so easy to make, I am sure they will become a regular feature on my weekly meal prep lineup!

SKILL LEVEL: Easy
MAKES: 6 Donuts

INGREDIENTS

  • ½ cup almond flour

  • ½ cup vanilla plant-based protein powder (I use Orgain! Try it now and get 30% off using the code MELISSAFAB30)!

  • 1 tsp. baking powder

  • 1 tsp. cinnamon

  • 1⁄4 cup unsweetened vanilla almond milk

  • 1⁄4 cup unrefined coconut sugar

  • 1 flax egg (1 TBS flax seed + 3 TBS water)

  • 1 TBS melted coconut oil

INSTRUCTIONS

  1. Preheat oven to 350 degrees.

  2. Combine all ingredients in a bowl and stir to combine.

  3. Spray a donut pan with oil spray and add batter. You can buy a two pack of pans on Amazon for cheap :-)

  4. Bake for 15-20 minutes or until a toothpick comes out clean.

  5. Eat and enjoy!

VARIATIONS

  • Substitute the vanilla protein powder for your favorite flavors (chocolate, peanut butter, etc.)

  • Drizzle donuts with honey, maple syrup, peanut butter, jam/jelly, etc.

  • The options are endless ;)
