Plant-based PB Chocolate Chip Cookie Dough Bites

Do you love sweets as much as I do? If so... keep reading.

Over the course of my recipe posts I have made 3 things very obvious:
1) I LOVE peanut butter
2) I have a sweet tooth
3) Healthy recipes do NOT have to lack flavor

Let's just call this recipe a triple whammy in satisfying my beliefs and interests around delicious food.

These cookie dough bites are made with my favorite plant-based protein powder, they are vegan (so hell yes, eat the dough right out of the bowl), and spoiler alert, they taste like the inside of a Reese's Egg!

INGREDIENTS

  • 3/4 cup oat flour

  • 3/4 cup almond meal or almond flour

  • 2 scoops Orgain vanilla protein*

  • 1/4 teaspoon fine sea salt

  • 1 cup (270 g) peanut butter

  • 1/4 cup maple syrup

  • 1 teaspoon pure vanilla extract

  • 1/4 cup chocolate chips

INSTRUCTIONS

Combine dry and wet ingredients in two separate bowls. Mix dry and wet ingredients together. Roll into about 1 tbsp balls using cookie dough scoop or spoon.

Eat and enjoy!
